Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1/2 small onion chopped
  • 2 cloves garlic minced
  • 1 cup diced tomatoes no sugar added
  • 1/2 cup beef broth
  • 1 –2 chipotle peppers in adobo chopped
  • 1 tbsp adobo sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 cup bell peppers chopped
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Heat olive oil in a pot over medium heat
  2. Sauté onion until soft, then add garlic
  3. Add ground beef and cook until browned
  4. Stir in diced tomatoes and beef broth
  5. Add chipotle peppers, adobo sauce, and bell peppers
  6. Season with salt, pepper, chili powder, smoked paprika, and cumin
  7. Mix well and bring to a simmer
  8. Cook for 25–30 minutes until thickened and flavorful
  9. Stir occasionally to prevent sticking
  10. Garnish with fresh cilantro and serve hot

Notes

  • Adjust the Chipotle quantity based on spice preference
  • Add sour cream or cheese to balance heat
  • Let chili rest 10 minutes before serving for a deeper flavor
  • Store leftovers in the fridge for up to 4 days
