Ingredients
  

  • 2 lbs 900g chicken breasts or thighs
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup fresh spinach
  • 2 tablespoons olive oil or butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning

Method
 

  1. Place chicken in the slow cooker
  2. Add chicken broth, garlic, olive oil, salt, pepper, and Italian seasoning
  3. Pour in heavy cream
  4. Cover and cook on low for 4–6 hours or high for 2–3 hours
  5. Stir in parmesan cheese and sun-dried tomatoes
  6. Add spinach and cook until wilted
  7. Stir well until sauce is creamy
  8. Serve warm and enjoy

Notes

  • Use chicken thighs for extra tenderness
  • Do not overcook to keep chicken juicy
  • Add mushrooms for more flavor
  • Serve with cauliflower rice or zucchini noodles
  • Perfect for meal prep
