Method
- Melt butter in a pot over medium heat
- Add onion and garlic and sauté until soft
- Add cauliflower and chicken broth
- Bring to a boil, then reduce to simmer
- Cook for 15–18 minutes until cauliflower is tender
- Blend until smooth and creamy
- Stir in heavy cream and cheddar cheese
- Mix until cheese is melted
- Season with salt and pepper and serve warm
Notes
- Blend fully for a smooth texture or partially for chunkiness
- Do not boil after adding cream and cheese
- Add bacon bits or herbs for extra flavor
- Use vegetable broth for variation
