Ingredients
  

  • 1 medium cauliflower chopped into florets
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1/2 cup onion chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Melt butter in a pot over medium heat
  2. Add onion and garlic and sauté until soft
  3. Add cauliflower and chicken broth
  4. Bring to a boil, then reduce to simmer
  5. Cook for 15–18 minutes until cauliflower is tender
  6. Blend until smooth and creamy
  7. Stir in heavy cream and cheddar cheese
  8. Mix until cheese is melted
  9. Season with salt and pepper and serve warm

Notes

  • Blend fully for a smooth texture or partially for chunkiness
  • Do not boil after adding cream and cheese
  • Add bacon bits or herbs for extra flavor
  • Use vegetable broth for variation
