Method
- Heat a pot over medium heat and cook bacon until crispy
- Remove bacon and set aside, leaving some fat in the pot
- Add onion and sauté until soft, then add garlic
- Add ground beef and cook until browned
- Stir in diced tomatoes and beef broth
- Add bell peppers and all spices
- Mix well and bring to a simmer
- Cook for 20–25 minutes until thickened
- Stir in shredded cheddar cheese until melted
- Add bacon back into chili and mix well
- Garnish with fresh cilantro and serve hot
Notes
- Adjust spice level as desired
- Use smoked bacon for a deeper flavor
- Add sour cream for extra creaminess
