Ingredients
  

  • 1 lb ground beef
  • 6 slices bacon chopped
  • 1 tbsp olive oil optional
  • 1/2 small onion chopped
  • 2 cloves garlic minced
  • 1 cup diced tomatoes no sugar added
  • 1/2 cup beef broth
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper optional
  • 1/2 cup bell peppers chopped
  • 1 cup shredded cheddar cheese
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Heat a pot over medium heat and cook bacon until crispy
  2. Remove bacon and set aside, leaving some fat in the pot
  3. Add onion and sauté until soft, then add garlic
  4. Add ground beef and cook until browned
  5. Stir in diced tomatoes and beef broth
  6. Add bell peppers and all spices
  7. Mix well and bring to a simmer
  8. Cook for 20–25 minutes until thickened
  9. Stir in shredded cheddar cheese until melted
  10. Add bacon back into chili and mix well
  11. Garnish with fresh cilantro and serve hot

Notes

  • Adjust spice level as desired
  • Use smoked bacon for a deeper flavor
  • Add sour cream for extra creaminess
  • Let chili rest before serving for the best texture
