Ingredients
  

  • 8 large eggs
  • 1 cup milk
  • 1 cup fresh spinach chopped
  • 1 cup mushrooms sliced
  • 1 small onion finely chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 9x9-inch baking dish.
  3. Heat olive oil in a skillet over medium heat.
  4. Sauté mushrooms and onion until softened.
  5. Add chopped spinach and cook until wilted.
  6. In a bowl, whisk eggs and milk together.
  7. Stir in garlic powder, salt, and black pepper.
  8. Spread vegetable mixture evenly in baking dish.
  9. Pour egg mixture over vegetables.
  10. Sprinkle mozzarella and cheddar cheese on top.
  11. Bake for 30–35 minutes until eggs are set and top is golden.
  12. Let cool slightly before slicing and serving.

Notes

  • Add cooked sausage or bacon for extra protein.
  • Use feta cheese for a Mediterranean twist.
  • Do not overbake to keep the texture soft.
  • Store leftovers in the refrigerator for up to 3 days.
