Ingredients
  

  • 2 lbs ground beef
  • 1 tbsp olive oil
  • 1/2 small onion chopped
  • 3 cloves garlic minced
  • 1 1/2 cups diced tomatoes no sugar added
  • 1 cup beef broth
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper optional
  • 1 cup bell peppers chopped
  • 2 tbsp tomato paste
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Heat olive oil in a pan and brown ground beef
  2. Transfer beef to slow cooker
  3. Add onion, garlic, diced tomatoes, beef broth, and tomato paste
  4. Add bell peppers and all spices
  5. Stir well to combine
  6. Cover and cook on low for 6–8 hours or high for 3–4 hours
  7. Stir occasionally if possible
  8. Garnish with fresh cilantro before serving

Notes

  • Browning beef enhances flavor but can be skipped
  • Adjust the spice level to your preference
  • Add shredded cheese or sour cream before serving
  • Store leftovers in the fridge for up to 4 days
