Method
- Heat olive oil in a pan and brown ground beef
- Transfer beef to slow cooker
- Add onion, garlic, diced tomatoes, beef broth, and tomato paste
- Add bell peppers and all spices
- Stir well to combine
- Cover and cook on low for 6–8 hours or high for 3–4 hours
- Stir occasionally if possible
- Garnish with fresh cilantro before serving
Notes
- Browning beef enhances flavor but can be skipped
- Adjust the spice level to your preference
- Add shredded cheese or sour cream before serving
- Store leftovers in the fridge for up to 4 days
