Ingredients
  

  • 6 eggs
  • 1 cup cooked ground beef or sausage
  • 1/2 cup shredded cheese
  • 1/2 cup cauliflower rice
  • 1/2 cup bell peppers chopped
  • 1/4 cup onions chopped
  • 1/2 avocado sliced
  • 2 tablespoons salsa
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Heat olive oil in a pan and sauté onions and bell peppers until soft
  2. Add cauliflower rice and cook for 3–4 minutes
  3. Stir in cooked meat and mix well
  4. In another pan, scramble eggs with salt and pepper
  5. Divide veggie-meat mixture into bowls
  6. Top with scrambled eggs
  7. Add cheese, avocado slices, and salsa
  8. Serve warm and enjoy
