Ingredients
  

  • 1 lb chicken breast cooked and shredded
  • 1 tbsp olive oil
  • 1/2 small onion chopped
  • 2 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup cream cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp paprika
  • 1/4 cup green chilies chopped
  • 1/2 cup cauliflower finely chopped or riced
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Heat olive oil in a pot over medium heat
  2. Sauté onion until soft, then add garlic
  3. Add chicken broth and bring to a simmer
  4. Stir in heavy cream and cream cheese
  5. Mix until smooth and creamy
  6. Add shredded chicken, cauliflower, and green chilies
  7. Season with salt, pepper, cumin, chili powder, and paprika
  8. Simmer for 15–20 minutes until thickened
  9. Stir occasionally to prevent sticking
  10. Garnish with fresh cilantro and serve hot

Notes

  • Use rotisserie chicken for quicker prep
  • Adjust thickness with more broth if needed
  • Add shredded cheese for extra richness
  • Let chili rest 5–10 minutes before serving
