Keto Taco Stuffed Peppers with Ground Beef

Ingredients
  

  • 4 large bell peppers halved and seeded
  • 500 g ground beef
  • 1/2 cup onion chopped
  • 2 cloves garlic minced
  • 1/2 cup tomato sauce low-carb
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese cheddar or Mexican blend

Method
 

  1. Preheat oven to 180°C (350°F)
  2. Place halved bell peppers in a baking dish
  3. Cook ground beef in a pan until browned
  4. Add onion and garlic and sauté until soft
  5. Stir in tomato sauce and spices and mix well
  6. Spoon beef mixture into bell peppers
  7. Top with shredded cheese
  8. Bake for 20–25 minutes until peppers are tender and cheese is melted
  9. Serve warm and enjoy

Notes

  • Use different colored peppers for variety
  • Add jalapeños for extra spice
  • Do not overcook peppers to keep a slight crunch
  • Great for meal prep and leftovers
  • Top with sour cream or avocado before serving
