Ingredients
  

  • 2 lbs 900g chicken thighs or breasts
  • 1/2 cup unsalted butter melted
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley for garnish

Method
 

  1. Place chicken in the slow cooker
  2. In a bowl, mix melted butter, garlic, chicken broth, and seasonings
  3. Pour mixture over chicken
  4. Cover and cook on low for 4–6 hours or high for 2–3 hours
  5. Check that chicken is tender and fully cooked
  6. Spoon garlic butter sauce over chicken before serving
  7. Garnish with fresh parsley and serve warm

Notes

  • Use chicken thighs for extra juiciness
  • Do not overcook to keep the chicken tender
  • Add mushrooms or spinach for variation
  • Serve with cauliflower rice or steamed veggies
