Keto Shrimp Alfredo (Zucchini Noodles)

A creamy, comforting low-carb classic made lighter with zucchini noodles. Juicy shrimp are tossed in a rich garlic Parmesan Alfredo sauce and served over fresh zoodles. It’s a quick, satisfying keto meal that feels indulgent without the carbs—perfect for weeknight dinners.

Ingredients
  

  • 500 g – Shrimp peeled & deveined
  • 3 tbsp – Butter
  • 3 cloves – Garlic minced
  • 1 cup – Heavy cream
  • ½ cup – Parmesan cheese grated
  • 3 – Zucchini spiralized
  • ½ tsp – Salt
  • ¼ tsp – Black pepper
  • 1 tsp – Italian seasoning
  • 2 tbsp – Fresh parsley chopped

Method
 

  1. Spiralize zucchini into noodles and set aside.
  2. Heat butter in a pan over medium heat.
  3. Add garlic and sauté until fragrant.
  4. Add shrimp and cook for 2–3 minutes per side, then remove and set aside.
  5. In the same pan, add heavy cream and bring to a simmer.
  6. Stir in Parmesan cheese until melted and smooth.
  7. Add salt, pepper, and Italian seasoning.
  8. Toss in zucchini noodles and cook for 2–3 minutes (do not overcook).
  9. Return shrimp to the pan and mix gently.
  10. Garnish with parsley and serve immediately.

Notes

  • Don’t overcook zucchini noodles to avoid sogginess.
  • Pat shrimp dry before cooking for a better sear.
  • Use freshly grated Parmesan for best texture.
  • Serve immediately for the creamiest consistency.
