Ingredients
  

  • 4 chicken breasts
  • 1 cup grated parmesan cheese
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 2 tablespoons olive oil or butter

Method
 

  1. Preheat oven to 200°C (400°F) and line a baking tray
  2. In one bowl, whisk eggs
  3. In another bowl, mix parmesan, almond flour, garlic powder, paprika, salt, and pepper
  4. Dip chicken into egg mixture, then coat with parmesan mixture
  5. Heat olive oil in a pan and sear chicken 2–3 minutes per side until golden
  6. Transfer chicken to baking tray
  7. Bake for 10–12 minutes until fully cooked
  8. Let rest for a few minutes before serving

Notes

  • Searing first gives extra crispiness
  • Use finely grated parmesan for the best coating
  • Add Italian herbs for more flavor
  • Do not overbake to keep the chicken juicy
  • Great with salad or roasted veggies
