Method
- Preheat oven to 200°C (400°F) and line a baking tray
- In one bowl, whisk eggs
- In another bowl, mix parmesan, almond flour, garlic powder, paprika, salt, and pepper
- Dip chicken into egg mixture, then coat with parmesan mixture
- Heat olive oil in a pan and sear chicken 2–3 minutes per side until golden
- Transfer chicken to baking tray
- Bake for 10–12 minutes until fully cooked
- Let rest for a few minutes before serving
Notes
- Searing first gives extra crispiness
- Use finely grated parmesan for the best coating
- Add Italian herbs for more flavor
- Do not overbake to keep the chicken juicy
- Great with salad or roasted veggies
