Method
- Preheat oven to 180°C (350°F)
- Brush eggplant slices with olive oil and lightly roast for 10 minutes
- Cook ground beef in a pan until browned
- Add onion and garlic and sauté until soft
- Stir in tomato sauce, Italian seasoning, salt, and pepper
- In a baking dish, layer eggplant and beef mixture
- Top with mozzarella and parmesan cheese
- Bake for 25–30 minutes until bubbly and golden
- Let cool slightly before serving
Notes
- Salt eggplant beforehand to reduce bitterness
- Do not overcook eggplant to keep its structure
- Add spinach or mushrooms for extra veggies
- Use full-fat cheese for the best keto results
