Ingredients
  

  • 2 large eggplants sliced
  • 500 g ground beef
  • 1 cup tomato sauce low-carb
  • 1/2 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat oven to 180°C (350°F)
  2. Brush eggplant slices with olive oil and lightly roast for 10 minutes
  3. Cook ground beef in a pan until browned
  4. Add onion and garlic and sauté until soft
  5. Stir in tomato sauce, Italian seasoning, salt, and pepper
  6. In a baking dish, layer eggplant and beef mixture
  7. Top with mozzarella and parmesan cheese
  8. Bake for 25–30 minutes until bubbly and golden
  9. Let cool slightly before serving

Notes

  • Salt eggplant beforehand to reduce bitterness
  • Do not overcook eggplant to keep its structure
  • Add spinach or mushrooms for extra veggies
  • Use full-fat cheese for the best keto results
  • Great for meal prep and leftovers
