Keto Ground Beef and Cauliflower Casserole

A hearty, cheesy, and low-carb casserole made with seasoned ground beef and tender cauliflower. This keto-friendly bake is rich, comforting, and perfect for easy family dinners or weekly meal prep.

Ingredients
  

  • 500 g ground beef
  • 1 medium cauliflower cut into florets
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp butter
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 1/2 tsp chili flakes optional
  • 1/4 cup grated parmesan cheese
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 180°C (350°F)
  2. Boil or steam cauliflower until slightly tender then drain well
  3. Heat butter in a pan and sauté onion and garlic until soft
  4. Add ground beef and cook until browned
  5. Season with paprika Italian seasoning salt and pepper
  6. Stir in heavy cream and cream cheese until smooth
  7. In a baking dish combine cauliflower and beef mixture
  8. Top with cheddar mozzarella and parmesan cheese
  9. Bake for 25–30 minutes until bubbly and golden
  10. Garnish with fresh parsley and serve hot

Notes

  • Do not overcook cauliflower to avoid mushiness
  • Add mushrooms or spinach for extra nutrients
  • Use sharp cheddar for a stronger flavor
  • Best served fresh, but stores well for 3 days in fridge
