Ingredients
  

  • 6 cups keto bread cubed
  • 6 eggs
  • 1 cup heavy cream
  • 1/4 cup keto sweetener erythritol or monk fruit
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • Pinch of salt

Method
 

  1. Preheat oven to 180°C (350°F)
  2. Grease a baking dish and add cubed keto bread
  3. In a bowl, whisk eggs, heavy cream, sweetener, cinnamon, vanilla, and salt
  4. Pour mixture evenly over bread
  5. Drizzle melted butter on top
  6. Let sit for 5–10 minutes to absorb
  7. Bake for 30–35 minutes until set and golden
  8. Let cool slightly and serve warm

Notes

  • Let bread soak well for the best texture
  • Use slightly stale bread for better absorption
  • Add nuts or sugar-free syrup for topping
  • Store leftovers in the fridge and reheat easily
