Ingredients
  

  • 500 –700g sausage Italian or smoked
  • 2 cups bell peppers sliced
  • 1/2 cup onion sliced
  • 2 cloves garlic minced
  • 1/2 cup tomato sauce low-carb
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Slice sausage into bite-sized pieces (or leave whole if preferred)
  2. Add sausage, bell peppers, onion, and garlic to crockpot
  3. Pour in tomato sauce and olive oil
  4. Add Italian seasoning, paprika, salt, and pepper
  5. Mix gently to combine
  6. Cover and cook on low for 4–6 hours or high for 2–3 hours
  7. Stir before serving and enjoy warm

Notes

  • Use spicy sausage for extra flavor
  • Do not overcook peppers to keep texture
  • Add mushrooms for variation
  • Serve with cauliflower rice or low-carb bread
  • Great for meal prep and leftovers
