Ingredients
  

  • 2 lbs 900g chicken breasts
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 1 packet ranch seasoning sugar-free if possible
  • 1/2 cup chicken broth
  • 2 cloves garlic minced
  • 1/2 teaspoon black pepper
  • 2 tablespoons green onions for garnish

Method
 

  1. Place chicken breasts in the crockpot
  2. Add chicken broth, garlic, ranch seasoning, and black pepper
  3. Top with cream cheese (do not stir yet)
  4. Cover and cook on low for 6 hours or high for 3 hours
  5. Shred chicken using two forks
  6. Stir everything together until creamy
  7. Mix in shredded cheddar and crumbled bacon
  8. Cook for another 10–15 minutes until melted
  9. Garnish with green onions and serve

Notes

  • Use chicken thighs for extra juiciness
  • Add spinach for extra nutrition
  • Serve in lettuce wraps or over cauliflower rice
  • Great for meal prep and freezing
  • Adjust ranch seasoning to taste
