Method
- Heat olive oil in a pan and lightly brown beef (optional but recommended)
- Add beef to crockpot
- Add celery, mushrooms, zucchini, onion, and garlic
- Pour in beef broth and stir in tomato paste
- Add thyme, rosemary, salt, pepper, and bay leaf
- Mix gently to combine
- Cover and cook on low for 6–8 hours or high for 4 hours
- Remove bay leaf before serving
- Serve hot
Notes
- Browning beef adds deeper flavor
- Use turnips instead of carrots for lower carbs
- Add spinach at the end for extra greens
- Store leftovers for up to 3 days
- Great for meal prep and freezing
