Ingredients
  

  • 4 chicken breasts or thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup fresh spinach
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning

Method
 

  1. Season chicken with salt, pepper, and Italian seasoning
  2. Heat olive oil in a pan over medium heat
  3. Cook chicken for 6–7 minutes per side until golden and cooked through
  4. Remove chicken and set aside
  5. In the same pan, sauté garlic until fragrant
  6. Add heavy cream and chicken broth and simmer
  7. Stir in parmesan cheese until smooth
  8. Add sun-dried tomatoes and spinach and cook until wilted
  9. Return chicken to pan and coat in sauce
  10. Serve warm and enjoy

Notes

  • Use chicken thighs for extra juiciness
  • Do not boil the sauce to keep it creamy
  • Add mushrooms for extra flavor
  • Serve with cauliflower rice or veggies
  • Best enjoyed fresh
