Method
- Season chicken with salt, pepper, and Italian seasoning
- Heat olive oil in a pan over medium heat
- Cook chicken for 6–7 minutes per side until golden and cooked through
- Remove chicken and set aside
- In the same pan, sauté garlic until fragrant
- Add heavy cream and chicken broth and simmer
- Stir in parmesan cheese until smooth
- Add sun-dried tomatoes and spinach and cook until wilted
- Return chicken to pan and coat in sauce
- Serve warm and enjoy
Notes
- Use chicken thighs for extra juiciness
- Do not boil the sauce to keep it creamy
- Add mushrooms for extra flavor
- Serve with cauliflower rice or veggies
