Ingredients
  

  • 2 cups broccoli florets chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 1/4 cup onion chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Melt butter in a pot over medium heat
  2. Add onion and garlic and sauté until soft
  3. Add broccoli and chicken broth and bring to a simmer
  4. Cook for 10–12 minutes until broccoli is tender
  5. Stir in heavy cream
  6. Add cheddar cheese gradually and stir until melted
  7. Blend slightly if a smoother texture is desired
  8. Season with salt and pepper
  9. Serve warm and enjoy

Notes

  • Do not boil after adding cheese to avoid separation
  • Use sharp cheddar for a stronger flavor
  • Blend fully for a creamy soup or leave chunky
  • Add bacon bits for extra taste
