Ingredients
  

  • 1 1/2 cups almond flour
  • 3 large eggs
  • 1/3 cup melted butter or coconut oil
  • 1/4 cup unsweetened almond milk
  • 1/4 cup erythritol or keto sweetener
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • For Cinnamon Swirl:
  • 2 tbsp erythritol
  • 1 tbsp cinnamon
  • 1 tbsp melted butter

Method
 

  1. Preheat oven to 350°F (175°C)
  2. Grease and line a loaf pan
  3. In a bowl, whisk eggs, melted butter, almond milk, vanilla, and sweetener
  4. In another bowl, mix almond flour, baking powder, baking soda, and salt
  5. Combine wet and dry ingredients until smooth batter forms
  6. In a small bowl, mix swirl ingredients
  7. Pour half of the batter into loaf pan
  8. Add half of cinnamon mixture and swirl with a knife
  9. Pour remaining batter and top with remaining cinnamon mixture
  10. Swirl gently to create a pattern
  11. Bake for 35–40 minutes until firm and golden
  12. Let cool completely before slicing

Notes

  • Do not over-swirl to keep layers visible
  • Let the bread cool fully before slicing
  • Store in fridge for up to 5 days
  • Toast slices and add butter for extra flavor
