Keto Chili with Cauliflower Rice

This hearty keto chili served over fluffy cauliflower rice, savory ground beef, and bold spices makes a complete low-carb meal. It’s filling, flavorful, and perfect for lunch or dinner. The cauliflower rice adds texture while keeping carbs low. A comforting bowl that’s both healthy and satisfying.

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1/2 small onion chopped
  • 2 cloves garlic minced
  • 1 cup diced tomatoes no sugar added
  • 1/2 cup beef broth
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper optional
  • 1/2 cup bell peppers chopped
  • 2 cups cauliflower rice
  • 1 tbsp butter
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Heat olive oil in a pot over medium heat
  2. Sauté onion until soft, then add garlic
  3. Add ground beef and cook until browned
  4. Stir in diced tomatoes and beef broth
  5. Add bell peppers and all spices
  6. Mix well and bring to a simmer
  7. Cook for 20–25 minutes until thickened
  8. In another pan, melt butter and sauté cauliflower rice for 5 minutes
  9. Spoon cauliflower rice into bowls
  10. Top with chili and garnish with cilantro

Notes

  • Adjust spice level to taste
  • Add cheese or sour cream for extra richness
  • Use frozen cauliflower rice for convenience
  • Let chili rest a few minutes before serving for the best flavor
