Method
- Heat olive oil in a pot over medium heat
- Sauté onion until soft, then add garlic
- Add ground beef and cook until browned
- Stir in diced tomatoes and beef broth
- Add bell peppers and all spices
- Mix well and bring to a simmer
- Cook for 20–25 minutes until thickened
- In another pan, melt butter and sauté cauliflower rice for 5 minutes
- Spoon cauliflower rice into bowls
- Top with chili and garnish with cilantro

- Adjust spice level to taste
- Add cheese or sour cream for extra richness
- Use frozen cauliflower rice for convenience
