Method
- Heat olive oil in a pot over medium heat
- Add onion and garlic and sauté until fragrant
- Add zucchini and cook for 3–4 minutes
- Pour in chicken broth and bring to a simmer
- Add cooked chicken and Italian seasoning
- Cook for 10–12 minutes until zucchini is tender
- Season with salt and pepper
- Serve warm and enjoy

- Use rotisserie chicken for convenience
