Ingredients
  

  • 4 chicken breasts
  • 1 cup fresh spinach chopped
  • 1/2 cup cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Method
 

  1. Preheat oven to 180°C (350°F)
  2. Slice a pocket into each chicken breast
  3. In a bowl, mix spinach, cream cheese, mozzarella, parmesan, and garlic
  4. Stuff the mixture evenly into each chicken breast
  5. Season outside with salt, pepper, and paprika
  6. Heat olive oil in a pan and sear chicken for 3–4 minutes per side
  7. Transfer to oven and bake for 15–20 minutes until fully cooked
  8. Let rest for a few minutes before serving

Notes

  • Secure with toothpicks if needed
  • Do not overstuff to prevent leaking
  • Use frozen spinach (drained) if fresh is not available
  • Add chili flakes for a spicy kick
  • Serve with low-carb veggies or salad
