Method
- Preheat oven to 180°C (350°F)
- Slice a pocket into each chicken breast
- In a bowl, mix spinach, cream cheese, mozzarella, parmesan, and garlic
- Stuff the mixture evenly into each chicken breast
- Season outside with salt, pepper, and paprika
- Heat olive oil in a pan and sear chicken for 3–4 minutes per side
- Transfer to oven and bake for 15–20 minutes until fully cooked
- Let rest for a few minutes before serving
Notes
- Secure with toothpicks if needed
- Do not overstuff to prevent leaking
- Use frozen spinach (drained) if fresh is not available
- Add chili flakes for a spicy kick
- Serve with low-carb veggies or salad
