Method
- Preheat oven to 180°C (350°F)
- Place hollowed zucchini halves in a baking dish
- Heat olive oil in a pan and cook ground beef until browned
- Add onion and garlic and sauté until soft
- Stir in spinach, tomato sauce, Italian seasoning, salt, and pepper
- Cook until spinach is wilted and mixture is well combined
- Spoon filling into zucchini boats
- Top with shredded cheese
- Bake for 20–25 minutes until zucchini is tender and cheese is melted
- Serve warm and enjoy
Notes
- Do not overbake to keep the zucchini firm
- Use frozen spinach (well-drained) if needed
- Add chili flakes for extra spice
- Great for meal prep and leftovers
- Serve with a side salad for a complete meal
