Keto Beef and Spinach Stuffed Zucchini Boats

These Keto Beef and Spinach Stuffed Zucchini Boats are hearty, cheesy, and packed with flavor. Tender zucchini halves are filled with seasoned ground beef and spinach, then baked with melted cheese for a satisfying low-carb meal.

Ingredients
  

  • 4 medium zucchinis halved and scooped
  • 400 –500g ground beef
  • 1 cup spinach chopped
  • 1/2 cup onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1/2 cup tomato sauce low-carb
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese mozzarella or cheddar

Method
 

  1. Preheat oven to 180°C (350°F)
  2. Place hollowed zucchini halves in a baking dish
  3. Heat olive oil in a pan and cook ground beef until browned
  4. Add onion and garlic and sauté until soft
  5. Stir in spinach, tomato sauce, Italian seasoning, salt, and pepper
  6. Cook until spinach is wilted and mixture is well combined
  7. Spoon filling into zucchini boats
  8. Top with shredded cheese
  9. Bake for 20–25 minutes until zucchini is tender and cheese is melted
  10. Serve warm and enjoy

Notes

  • Do not overbake to keep the zucchini firm
  • Use frozen spinach (well-drained) if needed
  • Add chili flakes for extra spice
  • Great for meal prep and leftovers
  • Serve with a side salad for a complete meal
