Ingredients
  

  • 2 cups unsweetened almond milk
  • 1/4 cup chia seeds
  • 2 tablespoons unsweetened cocoa powder
  • 2 –3 tablespoons keto sweetener erythritol or monk fruit
  • 1 teaspoon vanilla extract

Method
 

  1. In a bowl, whisk almond milk, cocoa powder, sweetener, and vanilla
  2. Add chia seeds and stir well
  3. Let sit for 5 minutes, then stir again to prevent clumping
  4. Cover and refrigerate for 2–3 hours until thick
  5. Stir before serving for smooth texture
  6. Serve chilled and enjoy

Notes

  • Stir twice early to avoid clumps
  • Adjust the sweetness to your taste
  • Use coconut milk for a richer version
  • Top with berries or nuts if desired
  • Store in fridge for up to 3 days
