Method
- Heat coconut oil in a pan over medium heat
- Add garlic and ginger and sauté until fragrant
- Add chicken pieces and cook until lightly browned
- Stir in curry powder, turmeric, cumin, salt, and pepper
- Pour in coconut milk and mix well
- Simmer for 12–15 minutes until chicken is cooked through
- Add spinach and cook until wilted
- Stir in lime juice and serve warm
Notes
- Use chicken thighs for extra flavor
- Adjust spices to your taste
- Do not boil coconut milk to keep it creamy
- Serve with cauliflower rice
