Ingredients
  

  • 500 g chicken breast or thighs, cut into pieces
  • 1 cup coconut milk full-fat
  • 2 tablespoons coconut oil or olive oil
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 tablespoon curry powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup spinach optional
  • 1 tablespoon lime juice

Method
 

  1. Heat coconut oil in a pan over medium heat
  2. Add garlic and ginger and sauté until fragrant
  3. Add chicken pieces and cook until lightly browned
  4. Stir in curry powder, turmeric, cumin, salt, and pepper
  5. Pour in coconut milk and mix well
  6. Simmer for 12–15 minutes until chicken is cooked through
  7. Add spinach and cook until wilted
  8. Stir in lime juice and serve warm

Notes

  • Use chicken thighs for extra flavor
  • Adjust spices to your taste
  • Do not boil coconut milk to keep it creamy
  • Serve with cauliflower rice
  • Great for meal prep
