Ingredients
  

  • 1 lb chicken breast diced or shredded
  • 1 tbsp olive oil
  • 1/2 small onion chopped
  • 2 cloves garlic minced
  • 1 cup diced tomatoes no sugar added
  • 1/2 cup chicken broth
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/2 cup bell peppers chopped
  • 1/4 cup green chilies chopped
  • 2 tbsp fresh cilantro chopped

Method
 

  1. Heat olive oil in a pot over medium heat
  2. Sauté onion until soft, then add garlic
  3. Add chicken and cook until lightly browned
  4. Stir in diced tomatoes and chicken broth
  5. Add bell peppers, green chilies, and spices
  6. Mix well and bring to a simmer
  7. Cook for 25–30 minutes until chicken is tender and flavors deepen
  8. Stir occasionally to prevent sticking
  9. Garnish with fresh cilantro and serve hot
