- In a large bowl, mix flour, salt, yeast, garlic, and herbs.

- Cover and let rest at room temperature for 12–18 hours.
- Preheat oven to 230°C (450°F) with a covered pot inside.
- Shape dough lightly and place on parchment paper.
- Transfer dough into the hot pot and cover.
- Bake for 30 minutes covered, then 10 minutes uncovered.
- Remove and let cool before slicing.
