Method
- Add cottage cheese, eggs, oats, baking powder, vanilla, and salt to a blender
- Blend until smooth batter forms
- Heat a non-stick pan over medium heat
- Add a little butter or oil to the pan
- Pour small amounts of batter to form pancakes
- Cook for 2–3 minutes until bubbles form, then flip
- Cook another 1–2 minutes until golden
- Serve warm with toppings of choice
Notes
- Blend well for smoother pancakes
- Skip oats for a lower-carb version
- Cook on medium-low heat to avoid burning
- Serve with berries, honey, or yogurt
- Best enjoyed fresh and warm
