- Heat olive oil in a pot over medium heat
- Sauté onion until soft, then add garlic
- Add chicken or pork and cook until lightly browned
- Stir in tomatillos and chicken broth
- Add green chilies and spices
- Mix well and bring to a simmer
- Cook for 25–30 minutes until meat is tender
- Stir occasionally and adjust seasoning
- Add lime juice before serving
- Garnish with fresh cilantro and serve hot
