Ingredients
  

  • 2 lbs 900g chicken breasts or thighs
  • 1 cup heavy cream
  • 1/2 cup cream cheese softened
  • 1 cup grated parmesan cheese
  • 3 cloves garlic minced
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning

Method
 

  1. Place chicken in crockpot
  2. Add chicken broth, garlic, butter, salt, pepper, and Italian seasoning
  3. Top with cream cheese and heavy cream
  4. Cover and cook on low for 4–6 hours or high for 2–3 hours
  5. Shred chicken using two forks
  6. Stir in parmesan cheese until sauce is smooth and creamy
  7. Cook for another 10–15 minutes until thickened
  8. Serve warm and enjoy

Notes

  • Do not boil after adding cheese to keep the sauce smooth
  • Use chicken thighs for extra richness
  • Add spinach or mushrooms for variation
  • Serve with zucchini noodles or cauliflower rice
  • Great for meal prep and leftovers
