Coconut Flour Sandwich Loaf

This soft and sturdy coconut flour sandwich loaf is a low-carb, keto-friendly bread alternative perfect for everyday use. It has a light coconut aroma and a slightly dense but fluffy texture. Ideal for sandwiches, toast, or meal prep. A simple gluten-free loaf that holds together beautifully.

Ingredients
  

  • 6 large eggs
  • 1/2 cup coconut flour
  • 1/4 cup melted butter or coconut oil
  • 1/2 cup unsweetened almond milk
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp apple cider vinegar
  • 1 tsp sweetener optional

Method
 

  1. Preheat oven to 350°F (175°C)
  2. Grease and line a loaf pan
  3. In a bowl, whisk eggs until frothy
  4. Add melted butter, almond milk, and apple cider vinegar
  5. In another bowl, mix coconut flour, baking powder, salt, and sweetener
  6. Combine wet and dry ingredients and mix until smooth
  7. Pour batter into loaf pan and spread evenly
  8. Bake for 35–40 minutes until golden and firm
  9. Let cool completely before slicing

Notes

  • Coconut flour absorbs a lot of liquid, so do not adjust measurements randomly
  • Let the loaf cool fully for the best texture and clean slices
  • Store in fridge for up to 5 days or freeze slices
  • Toast before serving for better flavor and structure
