Ingredients
  

  • 3 eggs separated
  • 3 tablespoons cream cheese softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 150°C (300°F)
  2. Line a baking tray with parchment paper
  3. Beat egg whites with cream of tartar until stiff peaks form
  4. In another bowl, mix egg yolks, cream cheese, mozzarella, and salt
  5. Gently fold egg white mixture into yolk mixture
  6. Spoon mixture onto tray into small rounds
  7. Bake for 20–25 minutes until golden
  8. Let cool slightly before serving

Notes

  • Fold gently to keep mixture airy
  • Bake at a low temperature for the best texture
  • Serve immediately for fluffiest results
  • Store in the fridge and reheat lightly
