Ingredients
  

  • 3 eggs separated
  • 3 tablespoons cream cheese softened
  • 1/4 teaspoon cream of tartar
  • 1 –2 tablespoons keto sweetener optional
  • 1/2 teaspoon vanilla extract
  • 1/3 cup fresh blueberries

Method
 

  1. Preheat oven to 150°C (300°F) and line a baking tray
  2. Beat egg whites with cream of tartar until stiff peaks form
  3. In another bowl, mix egg yolks, cream cheese, sweetener, and vanilla
  4. Gently fold egg whites into yolk mixture
  5. Carefully fold in blueberries
  6. Spoon mixture into small rounds on the tray
  7. Bake for 20–25 minutes until golden and set
  8. Cool before serving

Notes

  • Fold gently to keep the batter airy
  • Use fresh blueberries to avoid excess moisture
  • Best eaten fresh for fluffy texture
  • Store in fridge and reheat lightly if needed
  • Great as a light snack or breakfast option
