Ingredients
  

  • 2 ripe bananas mashed
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup chocolate chips
  • 1/3 cup melted butter or oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 180°C (350°F) and line a muffin tin
  2. In a bowl, mix mashed bananas, melted butter, egg, and vanilla
  3. Add flour, sugar, baking soda, and salt and mix until combined
  4. Fold in chocolate chips
  5. Divide batter evenly into muffin cups
  6. Bake for 18–20 minutes until a toothpick comes out clean
  7. Let cool slightly before serving

Notes

  • Use overripe bananas for best flavor
  • Do not overmix the batter to keep the muffins soft
  • Add walnuts for extra crunch
  • Store in an airtight container for freshness
  • Best enjoyed warm
